Made with black beans, corn, red onions, jalapeños, and cilantro, this healthy and filling appetizer (or snack) is seriously delicious… This Black Bean and Corn Salsa is my go-to party or potluck recipe. People often ask me for the recipe, so here it comes.

If you try this salsa, you’ll be very impressed. Seriously, you won’t believe that such simple ingredients can taste so good together! I seasoned it with a touch of cumin, salt, lemon juice, and some olive oil.

Main Ingredients

Black Beans. You can cook the black beans yourself, or buy canned beans.

Corn. I love using fresh produce whenever I can, so when corn is in season, I prefer to use fresh. Canned or thawed frozen corn can also be used successfully. 

Onion. Red onion works best, but white onion can also be used.

Jalapeños. These peppers add nice color, flavor, and a bit of heat to the salsa. Don’t skip ’em!

Cilantro. If you aren’t a fan of cilantro, you can leave it out, or use parsley, basil, or chives instead. 

Lime Juice. Lime juice brings a ton of flavor to the salad. Use lemons if you can’t find limes.

Olive Oil. Extra Virgin Olive Oil is going to add some health benefits and additional flavors.

Cumin Powder. This spice is optional but I find it pairs perfectly with this salsa.

Salt.

NOTE: Tomatoes also make a great addition to this salsa. I often skip them though because the salsa doesn’t store very well with tomatoes in it. So, if you are planning to eat salsa during the day, add some diced tomatoes. However, if you are making it for a party, potluck, or planning to store it for a couple of days, it’s best to leave them out.

How to Make Black Bean and Corn Salsa

1. Place all of the salsa ingredients into a medium mixing bowl and give it a good stir. Taste, and adjust the seasonings to your preference, if necessary.

2. Serve with crunchy tortilla chips as a tasty dip. Or serve on top of meals, in tacos, salads, burritos, etc… It’s fantastic every which way!

How to Store Black Bean and Corn Salsa

Store this salsa in the refrigerator, in an airtight container for up to 3 days. If you are prepping it ahead of time, it’s best to add the lime juice, olive oil, salt, and cumin right before serving.

Tasty Additions

If you are feeling adventurous or just want to mix things up, you can add the following ingredients to this salsa:

  • Avocado (1 large diced avocado per recipe)
  • Bell Peppers (Diced, 1 cup per recipe)
  • Roasted Bell Peppers (Diced, 1 cup per recipe)
  • Celery (Diced, 1 cup per recipe)
  • Carrots (Diced, 1 cup per recipe)

Ways to Enjoy This Salsa

  • Serve this Black Beans and Corn Salsa as an appetizer with tortilla chips.
  • Make tacos. Grab some tortillas, chicken/shrimp/tofu, salsa and any toppings you prefer and make tacos.
  • Top any salad with this tasty salsa.
  • As a side dish. Serve it on the side with your favorite meals!
  • In a wrap. Add a generous amount of hummus on top of a large flour tortilla, add some salsa, chicken or shrimp, and wrap it.
