In my opinion, one of the BEST side dishes to your protein is a good pan of perfectly seasoned, perfectly roasted veggies! I’m always down for some roasted kabocha squash or cumin roasted carrots, so today we are going to add some more roasted deliciousness to the blog! Introducing oven roasted leeks to the crew- these leeks are healthy, tasty and roasted to perfection, what’s NOT to love?! On top of all of that, they are incredibly easy to make and the whole family is going to love them.

Ingredients Needed

Cooking your own roasted leeks at home is SO simple, and only a handful of ingredients are required to make them a reality. Say HELLO to flavor, but goodbye to finicky, complicated recipes! Here is everything you will need to get started on this recipe:

  • Leeks
  • Olive Oil
  • Minced Garlic
  • Tarragon
  • Salt

How to Roast Leeks

Not only does this recipe call for minimal ingredients, it is also SUPER simple to throw together! It’s the perfect easy side dish that will also impress your guests!

Prepare

Turn on the oven and let it fully preheat while you work. Line a baking sheet with parchment paper and set it aside. 

Slice

Cut all the hairy ends off of one side of the leeks, and also cut off the dark green ends off the other side. Cut the leeks into thirds, then also slice each third lengthwise. 

Season

Place the leeks on the prepared pan. Rub them all generously with oil, then sprinkle on the garlic and tarragon evenly. Season all the leeks well with salt. 

Roast

Flip the leeks cut-side down and place the pan in the oven to cook for a while. Flip at the 20 minute point, and continue roasting the leeks until they are soft and have browned lightly.

Serving Suggestions

These leeks are SO flavorful and speak for themselves! However, I feel that they are most delicious when served as a side dish. These leeks would be so tasty alongside some pecan crusted chicken or perhaps some baked balsamic goat cheese stuffed pomegranate chicken and finished off with a kale salad with cranberries. This recipe is SO versatile and the flavors pair beautifully with all sorts of main dishes, so there are endless ways to enjoy it!

What do Leeks taste like?

Leeks are from the allium family, so they are similar to garlic, chives, shallots and onions. They have a sweet, less intense onion-like flavor, and add so much depth and body to whatever meal you serve them with!

Can you eat raw Leeks?

While leeks can be eaten raw, this is not typical. The flavor is much stronger when sliced and eaten raw, so I do recommend cooking them!

Are all parts of Leeks edible?

Most people choose to cook with and eat only the white and light green parts of the leek. However, the top dark green leafy part of the leek is great for making stocks and adding flavor to soups! If eaten on its own, it does have a bit of a bitter taste.
